Spinach and Artichoke Dip

Another party favourite!
Ingredients:
8oz cream cheese (reduced fat ok)
16oz sour cream
8 tbsp unsalted butter
2 cups shredded Parmesan cheese
14oz tinned artichoke hearts, drained and coarsely chopped
200g Bag of baby spinach
3 cloves of garlic, crushed
Method:

Spinach and artichoke dip

  1. In a large pan over a medium heat, melt the cream cheese, sour cream, butter and parmesan.  Stir frequently until melted and an even consistency.
  2. Meanwhile, put the spinach in a large pan over a medium heat and stir constantly until completely cooked.  Squeeze out all the liquid and pat with kitchen paper.
  3. Into the cheese mixture, stir in the artichokes, spinach and garlic.
  4. Serve hot with toasted baguettes, tortilla chips, or crackers.

 

(makes a large quantity, so half recipe if just for 4 people.  Can be re-heated)
