Christmas Carrot Cake
The orange and mixed spice in this yummy Christmas Carrot cake from Little Dish gives it a really festive feel!
Butter, for greasing
100g Light muscovado sugar
150ml Sunflower oil
2 Large eggs
125g Wholemeal plain flour
125g Plain flour
2 tsp Baking powder
1 tsp Mixed spice
Juice of 1 orange (100 ml)
2 ripe bananas, mashed
125g grated carrots
60g Raisins or sultanas
  1. Preheat the oven to 180°C/350°F/Gas 4.
  2. Lightly grease an 18-cm (7-inch) cake tin with butter.
  3. In a bowl, beat the sugar and oil together with a wooden spoon until smooth, then beat in the eggs, one at a time.
  4. Sift in the flour, add baking powder, mixed spice, orange juice and stir well. Fold in the banana, carrots and raisins.
  5. Pour the mixture into the tin and bake for 45–50 mins, until the cake is well risen and firm to touch.
  6. Let the cake cool for a few mins, then turn out on to a wire rack to cool.


Icing – beat 200g of cream cheese with 1tsp of vanilla extract. Then gradually beat in 80g of sifted icing sugar until smooth.
