Chocolate cake-sale-birthday-cake-Traybake
This is the cake I make for every school cake sale and it always goes down a storm! It's also a good easy birthday cake option, using smarties to spell out a name or an age on the top.

4 tbsp cocoa
4tbsp hot water
8oz butter
6oz caster sugar
10oz self-raising flour
2 tsp baking powder
4 eggs
1 tbsp milk


10oz icing sugar
2 tbsp cocoa powder
1 tbsp butter
3-4 tbsp boiling water
Hundreds and thousands or smarties (optional)


For the cake:


  1. Blend cocoa and water in a cup.
  2. Beat sugar and butter by hand or in a mixer until soft and fluffy
  3. Add eggs and mix well.
  4. Pour in chocolate mixture.
  5. Beat in flour and baking powder adding milk until you have a smooth batter.
  6. Pour into a greased roughly 12”x9” tin and bake at 160 for around 30 mins until springy and the skewer comes out clean.


For the topping:


  1. Melt the butter in a pan and let it cool
  2. Sieve icing sugar and cocoa into bowl.
  3. Add the melted butter and just 2 tbsp of the hot water. Stir together until smooth.
  4. Spread the lovely topping over the cold cake with a knife dipped into the remaining hot water.
  5. Quickly (it dries fast and they need to stick!) while still wet, sprinkle over hundreds and thousands or stick on smarties! If it does dry before you can sprinkle the hundreds and thousands, just spread your knife, dipped in hot water, over the topping to soften again.
  6. Cut into squares


NB – if you have any icing left over you can freeze it for the next cake!
